Two bowls of white bean soup

Okay, forgive me—we’re making two soups in a row! However it’s January, and comfortable, veggie-packed soups are all I’m craving proper now. Hopefully you’re in an identical place. 🙂

This white bean soup is my ideally suited winter meal—warming, nourishing, and filled with taste. It stars creamy, protein-rich white beans together with tender greens, kale, and herbs. Professional tip: It tastes even higher on day 2, so when you have leftovers, you’re in luck! Warmth them up for a scrumptious lunch.

This soup is of course vegan and gluten-free. I give the choice of serving it with Parmesan cheese on high, however after all you may skip that if you happen to’re vegan. Chopped contemporary parsley, a drizzle of olive oil, and selfmade croutons are nice toppings too!

Final Month’s Recipe

Final month, we made this potato soup recipe. I like making this soup two methods: with heavy cream for a standard model, and with plant milk for a non-dairy one. It was so enjoyable to see what number of of you experimented with the non-dairy model—oat milk was the preferred cream substitute! I’m so glad you had nice outcomes.

A particular shoutout to Graciela, who joined the cooking membership for the primary time this month and shared the soup together with her husband’s household. She wrote,“They completely cherished it!” I’m so glad you joined on this month, Graciela!

Additionally to rogue1, who served this soup on Christmas Eve. We love seeing when our recipes are a part of your vacation celebrations! Thanks a lot for cooking alongside.
