230 energy per serving

100g burrata or buffalo mozzarella
2 recent figs, quartered
2 giant handfuls of rocket
1 tbsp extra-virgin olive oil
1 tbsp balsamic vinegar
Contemporary basil, to serve

  1. Break the burrata or mozzarella into bite-sized items and place in a bowl with the figs. Add the rocket and blend properly to ensure every part is evenly distributed.
